Homemade Cinnamon Rolls

In my family it is tradition to make cinnamon rolls for someone’s birthday! For my birthday this year, I was feeling ambitious enough to make homemade cinnamon rolls. I wanted rolls that were doughy and moist. Looking around, I stumbled upon this fabulous recipe from Spend With Pennies┬áthat I wanted to share! These rolls are as close to cinnamon rolls that I have had outside of a mall, but so much better. As my partner says, they have a secret ingredient – Love.

Instructions
  1. Remember to leave out the eggs and butter so that they can rise to room temperature
  2. Combine 2 cups of flour and yeast in a large mixing bowl
  3. In a saucepan: combine milk, butter, sugar and salt over medium heat until temperature reaches 120-130 degrees F, when the butter has just melted
  4. Add milk mixture to flour along with the eggs and mix with an electric mixer, stirring in the rest of the flour until the dough is no longer sticky
  5. Place dough on a floured surface and knead in any remaining flour. Continue to knead the dough until it is smooth and elastic, which might take 5-10 minutes. Cover dough with oil or cooking spray and cover, leaving to rest for 15 minutes. In the meantime in a small bowl mix brown sugar and cinnamon
  6. Roll the dough into a 18"x21" rectangle. Spread 1/3 cup butter on the dough and top with the mixture of brown sugar and cinnamon
  7. Start rolling the dough the long way. Cut into 12 even rolls - I use unwaxed and unflavored floss to make even and fine cuts. Grease the pan that you would like to use and place rolls in the pan. Cover and let rise for about 45 minutes or until doubled in size. Preheat the oven for 400 degrees F
  8. Bake rolls for about 15 minutes or until lightly browned. Once finished allow the rolls to cool and spread frosting on the warm rolls
Frosting
  1. Combine cream cheese, 1/4 cup butter, confectioner's sugar, vanilla extract and salt with a mixer until fluffy. This will take a few minutes to soften and turn to the right consistency
