This recipe for Easy Beef Stroganoff is one that I love for easy weeknight meal! The beauty of it is there is not a ton of cooking time beyond cooking the beef, onion and mushrooms. This Beef Stroganoff is done in 30 minutes and less. A hit with my family!

Easy Beef Stroganoff
This is a Beef Stroganoff that can be put together really easily for a weeknight meal!
Instructions
  1. Boil a large pot of water. Add egg noodles and cook to the instructions on the package, drain and if done before the rest of the meal, add a little cooking oil of your choice to keep the noodles from sticking.
  2. In a large skillet melt the butter. Add the diced onion and mushrooms. Cook until the onion is translucent and mushrooms are slightly browned. Remove from pan onto a plate.
  3. Add the ground beef to the skillet and brown. Drain any grease. Sprinkle flour over the beef and pour in beef broth. Stir and continue to cook until the mixture thickens.
  4. Add the onions and mushrooms back into the skillet and stir in sour cream. Season with salt and pepper to taste. Let simmer for another 5 minutes until all ingredients have come together.
  5. Serve the mixture over the egg noodles and garnish with parsley if desired.
